7 day open ferment with regular pump overs. 12 months in old French oak. Bottled without fining or filtration.
Nose
Aromas of fragrant dried herbs, earth, spice and licorice.
Palate
Medium to full bodied in weight. A supple, creamy texture with fruit sweetness balanced by a savoury edge. Complex and long with a chalky finish.
